Kothu Paratha

Ingredients:
Paratha (can use readymade Kaawan Malaysian Paratha from Indian stores instead of this)
  • Maida flour—1 cup
  • Salt---1/4 teasp
  • Ghee---1/4 cup
  • Water ---Enough to make the dough

Gravy for Kothu Paratha
  • Onion - Cut 1
  • Green chillies - 4
  • Carrot - 1
  • Beans - 10
  • Potatoes - 1
  • Tomatoes - 3 
  • Turmeric Powder - 1/2 teaspoon
  • Coriander Powder - 2 teaspoons
  • Chilli Powder - 2 teaspoon
  • Garam Masala - 1 teaspoon

Procedure
Paratha
  • Mix salt, a little ghee and little water
  • Now rub in the flour and knead well to make soft dough.
  • Keep aside for 1 hour
  • Then make the dough into lime size balls
  • Press the balls with a rollerspin.to make 1/8 inch thick rotis
  • Now spread ½ teasp of ghee over the rotis,and pleat it like a fan folding
  • Now fold them into circle pieces and again roll them to ¼ inch thick rotis
  • Heat a pan and roast the paraths to golden brown color
  • Serve with any side dish. Exess rotis can be used for kothu parathas.

Gravy for Kothu Paratha
  • Heat 4 teasp of cooking oil and sauté all cut vegetables, and stir well
  • Add salt, turmeric powder, coriander powder, chilli powder and garam masala powder
  • Cut 4 parathas into small bits.
  • When the vegetables are cooked ,add the paratha bits, and mix well
  • Remove from fire
  • Ggarnish with coriander leaves and serve hot.
