Brinjal Stuffing

       
Ingredients:

1.      Brinjal---2nos
2.      Cuminseed 1/2teasp
3.      Coriander-seed--1teasp
4.      Groundnut--3 tea spoons,
5.      Coconut scrapings--2table spoons,
6.      Ginger--1 inch,
7.      Garlic-4pods,
8.      Chilly powder-3teasp
9.      Turmeric powder-1/2teasp
10.  Salt-to taste
11.  Oil -4 Table spoon
12.  Tamarind extract -4tablespoons

Procedure
·         Ground all masala ingredients to a fine paste
·         Wash and wipe brinjals and slit in the center
·         Fill up the opening with the masala paste
·         Keep a pan on the stove and
·         Heat the oil and put the stuffed brinjals.
·         Keep the fire low and allow it to cook for 5 min
·         Now add tamarind extract and cook for 5 more min
·         Remove from fire garnish with coriander leaves

Healthy option 2:
  • Ground all masala ingredients to a fine paste
  • Wash and wipe brinjals and slit in the center
  •  Fill up the opening with the masala paste
  •  Steam (no water in the brinjals) it for 10 minutes without the weight in pressure cooker
  • Heat 2 tablespoon oil (1/2 of the original recipe) and put the stuffed steamed brinjals
  • Keep the fire low and allow it to roast for 5 to 10 minutes (till the skin shrinks)
  •   Remove from fire garnish with coriander leaves
