Gravy for Kothu Paratha
Paratha (can use readymade Kaawan Malaysian Paratha from Indian stores instead of this)
- Maida flour—1 cup
- Salt---1/4 teasp
- Ghee---1/4 cup
- Water ---Enough to make the dough
Gravy for Kothu Paratha
- Onion - Cut 1
- Green chillies - 4
- Carrot - 1
- Beans - 10
- Potatoes - 1
- Tomatoes - 3
- Turmeric Powder - 1/2 teaspoon
- Coriander Powder - 2 teaspoons
- Chilli Powder - 2 teaspoon
- Garam Masala - 1 teaspoon
Paratha
- Mix salt, a little ghee and little water
- Now rub in the flour and knead well to make soft dough.
- Keep aside for 1 hour
- Then make the dough into lime size balls
- Press the balls with a rollerspin.to make 1/8 inch thick rotis
- Now spread ½ teasp of ghee over the rotis,and pleat it like a fan folding
- Now fold them into circle pieces and again roll them to ¼ inch thick rotis
- Heat a pan and roast the paraths to golden brown color
- Serve with any side dish. Exess rotis can be used for kothu parathas.
Gravy for Kothu Paratha
- Heat 4 teasp of cooking oil and sauté all cut vegetables, and stir well
- Add salt, turmeric powder, coriander powder, chilli powder and garam masala powder
- Cut 4 parathas into small bits.
- When the vegetables are cooked ,add the paratha bits, and mix well
- Remove from fire
- Ggarnish with coriander leaves and serve hot.
